New winter menu at Plato's restaurant
Plato's restaurant, located at the Aspen Meadows Resort, is introducing a fresh, new menu for the 2013 winter season.
Plato’s is an intimate dining experience accentuated with floor-to-ceiling windows offering sweeping views of the Rocky Mountains. Executive Chef Todd Slossberg creates contemporary cuisine using sustainable and fresh ingredients; his creations offer local ingredients from local and regional farmers.
“Our views and elevated location really set us apart from any other fine dining restaurant in Aspen,” says Ashley Lynch, director of food and beverage at Aspen Meadows Resort. “Our menu was conceived to highlight the best seasonal, locally sourced products—Plato’s is truly a treat for locals and guests alike.”
The winter menu features a variety of new dishes with highlights including: roasted white sturgeon, spiced rubbed duck breast, grilled Skuna Bay salmon, mustard crusted Colorado rack of lamb, winter vegetable shepherd’s pie, Harris Ranch New York strip and maple glazed double cut Eden Farms pork chops.
Chef Slossberg was recently featured in Edible Aspen as an “Edible Communities’ Local Hero.” He has also earned two consecutive nominations from the James Beard Foundation for “Best Chef in the Southwest.”
